Yield: 12-16 servings
Ingredients: Cake
1 cup butter
1 cup cola beverage
2 Tablespoons cocoa
1 cup mini marshmallows
2 cups flour
2 cups sugar
2 eggs
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla
Directions for cake:
Preheat oven to 350. Lightly spray a 9×13 baking pan with cooking spray.
1. Place butter, cola, cocoa powder and mini marshmallows in a medium saucepan on medium heat and bring to a boil.
2. Lower heat and continue to stir until the marshmallows have melted ( about 5 minutes ).
3. Remove from heat and cool slightly.
4. Combine flour and sugar in a large bowl. Set aside.
5. Combine buttermilk , eggs, baking soda, and vanilla in a small bowl. Set aside.
6. Add hot cola mixture to the flour mixture and stir until just combined.
7. Add egg mixture to this and stir until incorporated.
8. Pour mixture into prepared pan and bake 40-45 minutes or until toothpick comes out clean.
For the frosting:
6 Tablespoons cola
4 Tablespoons cocoa powder
1/2 cup butter
3 cups( 1 box) powdered sugar
1. Place cola, cocoa, and butter in a medium saucepan on medium heat and bring to a slight boil.
2. Turn off heat and add powdered sugar.
3. Mix together with a wire whisk to combine and remove lumps. Mixture should be thick and spreadable.
4. Pour hot mixture over the top of the warm cake and spread with a metal spatula.
5. Allow cake to cool; icing will harden slightly.
6. Cut into squares and serve warm or at room temperature.
