2 sticks butter
1 cup sugar
1 cup brown sugar
2 eggs
1 Tablespoon vanilla
2 cups flour
½ teaspoon baking powder
1 teaspoon baking soda
Pinch of salt
2 cups oatmeal
2 cups cereal (crushed)
½ cup raisins
½ cup dried cranberries
Preheat oven to 350.
- In a large bowl, CREAM butter and sugars with an electric mixer to look like one product.
- Add eggs and vanilla and mix until well blended
- In a small bowl, measure flour, baking powder, baking soda and a pinch of salt. Stir with a whisk until blended.
- In a medium sized bowl, measure the oatmeal, cereal, raisins and cranberries. Set aside.
- With an electric mixer add the flour to the creamed egg mixture and mix until blended.
- By hand, with a rubber scraper, add the cereal/raisin mixture to the cookie dough and mix until blended.
- Refrigerate dough.
- With a rounded tablespoon, roll cookie dough into a ball and drop onto a greased cookie sheet.
- Bake at 350 for 20 minutes or lightly browned.
This makes approx 4 dozen depending on the size you roll them. Leave some room because they will spread.
I like using Special K or a cereal that has some crunch. I have also decreased the amount of raisins or cranberries and have used walnuts.
My mother gave me this recipe a few years back and I never used it. We were looking for a breakfast cookie recipe for school and I brought this one in to my colleagues. The kids loved them!
