Yield: 60 cookies
5 cups flour
2 teaspoons baking soda
3 teaspoons ground ginger
½ teaspoon cinnamon
½ teaspoon ground cloves
1-cup butter
3 cups sugar
2 eggs
8 tablespoons black molasses
2 teaspoons lemon juice
1.Preheat oven to 325. Grease baking sheets
2.Sift flour, baking soda and spices into a bowl. Set aside
3.Cream Butter and 2 cups sugar
4.Stir in eggs, molasses and lemon juice. Mix in flour to make soft dough.
5.Shape the dough into ¾ inch balls. Roll in remaining sugar and place them about 2 inches apart on greased cookie sheets.
6.Bake about 12 minutes, until cookies are firm to the touch.
7.Remove from trays and cool.
Mom and I met Harmony and Will at the Radisson Hotel in King of Prussia when they were on the way to New Jersey one Christmas. I gave them a bag of these ginger cookies I was baking for Christmas. Will liked them so much , Harmony asked for the recipe. I really am not sure if this is the recipe ( this is the one I sent you Harmony 2008).
These are the ones we use in school for our community service project. Students bake cookies and reluctantly give us 1 1/2 dozen . Jeanne,Mary Anne and I pack them in decorative bags and trays and the nurse distributes them to students at the high school.
