Ingredients:
7 large eggs
1/2 cup half and half
1 medium onion, chopped
1 pound mushrooms, sliced
1/2 – 3/4 cup feta cheese, crumbled*
1 teaspoon salt
1/2 teaspoon pepper
Fresh herbs, chopped fine
parsley, basil, rosemary, chives
butter
cooking spray
Directions: Preheat oven to 350
1. Saute onion and mushrooms in butter until onions turn translucent and mushrooms are brown.
2. Break eggs in large bowl and whip to combine whites and yolks.
3. Add half and half, seasonings, and herbs to egg mixture.
4. Add cheese and onion mixture. Mix to combine.
5. Spray a pie or tart dish with cooking spray and add egg mixture.
6. Bake in preheated oven 30-35 minutes or until knife comes out clean.
* Again for our gluten free friends – you don’t even miss the crust! Experiment with different cheeses and vegetables. Enjoy!
