1/3 cup sugar for cookie
1/2 cup sugar for rolling
2 1/4 cup flour
1 1/2 teaspoon cinnamon
1 1/2 teaspoon ginger
1 teaspoon baking soda
1/2 teaspoon ground cloves
1/4 teaspoon ground allspice
1/4 teaspoon black peppper
1/4 teaspoon salt
12 Tablespoons butter, softened
1/3 cup packed brown sugar
1 large egg yolk
1 teaspoon vanilla
1/2 cup molasses
1. Adjust baking rack to middle position and preheat oven to 375. Line 2 baking sheets with parchment paper.
2.Spread 1/2 cup granulated sugar in a shallow dish.
3.In a medium bowl, whisk flour, cinnamon, ginger, baking soda, cloves, allspice, pepper and salt together.
4. With an electric mixer, beat butter, brown sugar , and the remaining 1/3 cup granulated sugar til light and fluffy (about 3 minutes)
5. Beat in egg yolk and vanilla ( 30 seconds), molasses ( 30 seconds); scraping down bowl as needed.
6. Reduce speed to low and slowly add flour mixture until incorporated. DOUGH WILL BE SOFT
7. Roll approx 2 Tablespoons of dough into a ball with wet hands, then roll in sugar to coat.
8. Space balls 2 inches apart on prepared pans.
9. Bake cookies 1 sheet at a time until edges are set and beginning to brown but centers are still soft and puffy. 10-12 minutes,
10 Let cookies cool on sheet for 5 minutes before removing them to the counter or wire rack.
YIELD 2 dozen.
Although I have not done it yet, you might as well double this recipe; because these are so good they go pretty fast!
These are the cookies I brought for Wil for his birthday 2013. He did not get many!
