Mom’s Lemon Snow

Serves 8-12

Ingredients:

1 cup sugar

1 large package lemon flavored jello

3 cup boiling water

1 Tablespoon grated lemon zest

1/2 cup lemon juice

1 cup crushed vanilla wafers or graham crackers

1 – 12 oz can evaporated milk ( chilled overnight in refrigerator )*

 

Directions:

1.  Dissolve sugar and jello in boiling water in bowl.

2.  Stir in lemon juice and zest.

3. Refrigerate until mixture is thickened but not completely set. ( 1- 1 1/2 hour )

4. Spray 13×9 baking dish with vegetable oil spray and coat bottom of pan with 1/2 cup cookie crumbs.

5.  With electric mixer in a large bowl, whip evaporated milk on medium high speed until stiff peaks form, about 5 minutes.

6.  Using clean, dry bowl and beaters, whip chilled jello mixture on medium high speed until thickened and light lemon colored. ( about 4 minutes)

7.  Using large spatula, fold jello mixture into whipped milk until no yellow streaks remain.

8.  Transfer mixture to prepared dish and smooth top.

9.  Sprinkle remaining crumbs on top.

10. Cover and refrigerate until fully set, at least 4 hours or overnight.

 

*Instead of refrigerating overnight, you can chill the milk in a shallow bowl until ice crystals form around the edges. You must chill the milk or it will not whip!  Mom made this all the time for dessert and it was a family favorite!
