Oatmeal

oatmeal
1/4 cup Craisins or raisins
apple cider
1/2 teaspoon cinnamon
dash nutmeg – or grated nutmeg
brown sugar
chopped walnuts

 

1.   Using the directions on the oatmeal box ( not instant) for the number of servings; – substitute apple cider for the amount of water and use the same amount of oatmeal.
2.  Add cider, brown sugar ,cinnamon, nutmeg and craisins to a saucepan and bring the mixture to a boil.
3.  Add the oatmeal and cook according to package directions.
4.  Spoon into bowls and add chopped walnuts.

 

I adapted this recipe from my favorite magazine COOKING LIGHT. Their recipe uses milk and apple juice. I eliminated the milk and only use apple cider. 

 I frequently make this oatmeal for mom on Saturdays in the fall and winter. It always amuses me to see her face when she takes her first bite; as if she is tasting it for the first time.( And in her world I guess she is).

I made this oatmeal for my sister Dori in Florida when I visited for Thanksgiving in 2006. She was still undergoing treatment for breast cancer.  Even though there was no frost on the pumpkins(actually there were no pumpkins at all !), it still warmed  her belly (and my heart) before we set out to visit her favorite orchid farms. AHHH the orchids!
