6 eggs
1 ½ cups sugar
1 cup butter
3 cups flour
4 teaspoon baking powder
2 Tablespoons anise seed
2 teaspoons anise extract
¼ cup vegetable oil
1. Melt butter in small saucepan. Cool
2. Beat eggs, adding sugar gradually. Beat until smooth.
3. Add cooled melted butter and anise oil.
4. Measure flour and baking powder in a bowl and mix to combine.
5. Add flour to egg mixture.
6. Add ¼ cup oil to batter and stir until smooth
7. Heat iron; drop by teaspoonfuls and cook until lightly browned.
Mom and dad always made pizzelles during the holidays. I love the anise flavor ; the house smells like the holidays. A former student’s mom Mrs. Holmes gave me this variation; so it is not truly mom’s recipe. These are crisp, delicate and tasty.
Don’t use the farmer’s market eggs. They are too large – just use large eggs from the grocery store. The oil should be light tasting like safflower oil.
