Tiramisu

Espresso Drizzle

1/2 cup strong coffee
2 Tablespoons sugar
2 Tablespoons Kahlua

Filling

1 (8 ounce) block fat free or 1/3 fat cream cheese
3.5 ounce mascarpone cheese
1/3 cup granulated sugar
1/4 cup brown sugar
2 Tablespoons Kahlua 

Remaining ingredients:

2 (3- ounce Packages)ladyfingers  or 1  poundcake
1/2 teaspoon unsweetened cocoa
grated chocolate bar

 

1.  Dissolve sugar in coffee by bringing it to a boil in a small pot.
2.  Add Kuhlua, remove from heat and allow to cool while you prepare the rest of the recipe. 
3.  Combine cheeses, sugars and Kahlua in a medium sized bowl and beat until mixture is creamy.
4. Arrange ladyfingers cut side up in the bottom of an 8 inch square baking dish.
5.  Drizzle 1/2 of espresso mixture over top of ladyfingers.
6.  Spread 1/2 of cheese mixture over ladyfingers.
7.  Repeat layers.
8.  Dust  with cocoa & shave chocolate over cheese .
9.  Cover and refrigerate at least 2 hours or overnight.

 

I found this Tiramisu recipe in Cooking Light.  If you can’t find lady fingers; pound cake is a good substitution. Just cut thin layers of cake and fit them into the bottom of your dish. The Mascarpone cheese I used  came in an 8 oz. tub.  I just used half of the tub; no measuring needed. If you don’t have liquor or don’t want to use it; amaretto syrup works well for the Kahlua.
