Sheet Pan Pizza

Ingredients:

Sheet Pan Pizza

1 3/4 cup warm water ( 110 )degrees

1/2 cups plus 1 Tablespoon extra virgin olive oil

1 Tablespoon sugar

5 cups ( 25 ounces) all purpose flour

2 packages  ( 4 1/2 teaspoons) rapid rise yeast

2 teaspoon salt

1 jar pizza sauce

1 small can petite cut tomatoes

3 cups mozzarella cheese

3 ounces ( 1 1/2 cups grated Parmesan Cheese )

optional toppings: anchovies, pepperoni, mushrooms, peppers garlic, hot pepper flakes etc.

Fresh basil

 

Dough Directions:

1. Grease a large bowl with olive oil .

2.Combine water, 1/4 cup oil and sugar in a 2-cup liquid measuring cup.

3.Using a stand mixer fitted with a dough hook; mix flour, yeast and salt on low speed until combined ( 30 Seconds)

4.Increase speed to medium low, add water mixture, and knead until dough is uniform in texture, about 3 minutes.

5.Transfer dough to oiled bowl , cover with plastic wrap, and let rise at room temperature until doubled in size ( 1 /12 hours )

 

Rolling Dough

1.  Evenly coat rimmed baking sheet( jelly roll pan) with 1/4 cup oil.

2. Coat your hands with flour and and place dough on a lightly floured work surface; use rolling pin to roll dough into a 16x 12 inch rectangle.

3. Transfer dough to prepared pan.

4. Brush dough evenly with remaining 1 tablespoon oil and cover with plastic.

5.  Set in a warm spot until slightly risen ( about 20 minutes).

 

Baking dough:

1.  Adjust oven rack to lowest position and heat oven to 450 degrees.

2. Remove plastic wrap from dough and, using your fingers, make indentations all over dough.

3.  Sprinkle with 1 cup of Parmesan cheese and bake until cheese  begins to melt ( 7- 10 minutes )

4. Remove sheet from oven and spoon sauce over pizza leaving 1 inch border. Bake another 7-10 minutes.

5. Add  optional toppings and sprinkle 3 cups mozzarella cheese and 1/2 cup Parmesan cheese over sauce and bake until cheese is golden brown, about 12 minutes.

6. Remove pizza from oven , let rest 5 minutes – Sprinkle with fresh basil. Cut and Serve.

 

This dough does not use a pizza stone, but the dough is very crisp. Higher baking temperature and olive oil on the pizza pan almost oven fry this pizza.
