Stuffed Cabbage Casserole

½ head cabbage
½ pound ground beef
¼ cup raw rice
½ large onion
½ teaspoon salt
garlic to taste
¼ teaspoon pepper
1 egg
1 can pureed tomatoes
1 small can tomato sauce

1.Chop cabbage into small dice.
2.Melt 1 tablespoon butter and place it in the bottom of glass baking pan.
3.Layer ½ of the chopped cabbage on bottom of the dish.
4.Mix ground beef, rice, egg, onion, salt and pepper in a medium size bowl.
5.Spread meat mixture on top of cabbage.
6.Place the rest of the cabbage on top of the meat.
7.Place the tomatoes and the tomato sauce in a small bowl; stir.
8.Pour tomato mixture on top of the cabbage.
9.Bake 350 for 1 ½ – 2 hours.

This is my go to recipe when I feel the need for comfort food without the work of regular stuffed cabbage.  Depending on the size casserole dish you use you could use more ground beef or a combination of beef, pork or veal.  Just use a very light hand when you are mixing the meat mixture.   Sometimes I add Worchestershire Sauce to the tomato mixture.
